The sensor-oriented RAW data is developed into display pixels using demosaicing, white balance, tone, orientation, and color interpretation before JPG encoding. That makes the result a rendered photograph, not another untouched camera negative. The generic RAW path cannot infer dimensions, channel packing, bit depth, or color interpretation from a suffix; those properties must come from the actual camera format. JPG delivery writes opaque, lossy photographic pixels; quality must be judged around high-contrast edges, gradients, fine texture, orientation, and repeated-encode damage.
